I don’t miss carbs. Not the way they weigh you down. Not the way they trick you into thinking “comfort” is found in a bread basket or boxed noodles. No, I’ve ditched that dusty road—and what I’ve found instead? Flavor-packed, guilt-free freedom on a fork.

This bowl right here? It’s got sour cream riding shotgun with a hunk of avocado, celery spears stacked up like they’re on patrol, all sitting on a bed of romaine that’s rocking shredded carrots and a mix of green and purple cabbage. Bell pepper’s here too, cucumber slices doing their usual thing, and one bold cherry tomato just flexin’ on top. What you can’t see—but absolutely should know—is there’s a splash of avocado oil in the mix, tying it all together like a boss.

Soup’s on! This bowl is riding deep. Fresh homegrown garlic—three cloves—chopped and tossed in like they run the joint. That broth? Bootstrapped from a reclaimed beef ramen packet, because waste not, want flavor. Under the surface, chopped celery leaves have melted down into the mix like stealthy little ninjas. I’m down to 337 lbs (152.9 kg)—with only 37 pounds (16.8 kg) to go before I wave goodbye to the 300 club for good. This isn’t a diet. This is a declaration. Creativity is the weapon.
